Feature Friday: Chef Lau's Pugon Roasters

Feature Friday highlights businesses, people, fashion, and basically anything under the sun!

Stumbled upon this over-the-counter-sort-of-carenderia resto in a certain mall in Manila during our last visit.  I was enthralled by the long line of people so I guessed that there must be something good about the place.  Then I told Papa to take a seat as I joined the others in the queue.  Looking up at their menu, they mostly serve chicken in whatever way cooked but their specialty is the Pugon Roast Chicken, traditionally roasted in a pugon.  If anything is being cooked in a native way, then it must be really, really good!

Cheesy Chicken Croquetas, Chicken Livers, Spicy Wings, and Pugon Roast Chicken
When our orders came, that's the time I realized that this fast food restaurant is actually owned by Chef Lau.  Remember him?  He was one of the judges/coaches of Junior MasterChef Pinoy Edition way back 2011-2012.  So I got thrilled to finally have a taste of his very own Filipino recipes with a twist!

The Pugon Roast Chicken is super gingerly as I remember, giving it a hint of Chinesy taste.  It's crispy in the outside, juicy in the inside, and talagang nanunuot sa buto ang lasa.  My fave Chicken Livers has a unique taste too.  It is too flavorful with my also fave nacho/chili-con-carne taste.  Until now, I couldn't decipher what herb/spice is that.  Definitely it's not paprika, oregano, or curry.  My apology.  I really haven't discovered it yet.  Anyway, Papa had the fried bangus sinigang which surprised us 'coz there's really no sabaw in it.  Kaya nga, "fried".   Hehe....  For take-out, we had Cheesy Chicken Croquetas and Spicy Wings that tasted the same as the Chicken Livers' "unknown" herb/spice.  Mama and Auntie Lourding didn't like it as they also always do every time I cook Mexican-style spaghetti with the taco mix, nachos, and tacos.  They just can't understand the smell of it.  But for me, it's heaven to my sense of smell and taste buds!  So I gobbled up everything instead!  Haha!

I felt so lucky to have had discovered Chef Lau's Pugon Roasters!  It was not part of our itinerary and we discovered it by chance.  That's what you call "serendipity" in science.  Chance discovery!  So thanks to the long line which called my attention and indeed, the place is not only a fast food resto but also a fast good resto!  I guarantee you, the food is really, really good and good to the pocket too!  Visit Chef Lau's Pugon Roasters in their branches in Sun Mall, Ayala Triangle Gardens, Light Mall in Mandaluyong ('coz we stayed in Light Residences), SM City San Lazaro, and McKinley Hill in Taguig.  This may be a little bit late but congratulations to you, Chef Lau for bringing Filipino food to a higher level so we can experience and enjoy Fiesta Araw-Araw!  #tosomeats #tosomtravels

Yna's Pinalayok/Angelo's Paella

As an avid fan of KathNiel, I've been following their running soap in primetime, Pangako Sa'yo.  Sadly, their new chapter doesn't please me because it's already very far from the original story.  It's like that they're taking a detour, making their story another story.  So with that, I'm writing a post dedicated to the first two-month episodes of the serye which made me hooked into it.  And since I love to cook, here's my version of Yna's pinalayok and Angelo's paella rolled into one (hopefully) delicious dish!  Here's how:

1. Sauté garlic, onion, and chicken strips.  Season with salt and pepper.
2. Layer-in cooked rice.
3. Fill-in with (leftover) chorizo and layer with cooked rice again.
4. Top with veggies of your choice and season with oyster sauce.

That's how easy it is!  Try it, try it, try it in your own kitchen! :)  See below for other #SundayHomeCooking recipes!  #PSYsaKusina #tosomeats

Fiesta Bay Asian Seafood Restaurant

Filipino restaurants are always at their best in Cebu just like Hukad sa Golden Cowrie.  For our recent trip, I'm privileged enough to have had tried another authentic Filipino cuisine at Fiesta Bay Asian Seafood Restaurant.  Now here's our top Fiesta Bay picks!

Fresh Lumpia for Starters
Fish Kinilaw for Appetizer
Baked Scallops for Appetizer
Fish Sinigang for Soup
Garlic Steak for Main Course
Chicken Pandan for Main Course
Crispy Pata for Main Course
Caramelized Coco Doughnuts for Dessert
The food was great, great, great from starters to main course to dessert!  The fresh lumpia was nutty which I love, the kinilaw's tangy taste was just so right, the baked scallops were creamy, the sinigang was truly asim-kilig, my fave chicken pandan was sarap to the bones, and the star of the table crispy pata was so namnam!  However, the garlic steak appeared not so good to my taste buds and the mini doughnuts were a bit oily.  But all in, I give the total package a very high 9.9 for the chicken and pork pata bones me and Ruth savored!

The ambiance of the place is also commendable for big groups of people.  There's plenty of room for every family, barkada, and workmates.  And the best thing that we love most of the resto is their personalized service.  An attendant in waiting is assigned for each table who is very sensitive to all your needs.  From big needs like taking your photos (for my case) to small needs like assisting you as you take your seat, taking care of your belongings so you can eat properly, passing the tissue holder around, and cleaning your mess on the table right away.  And the biggest bonus, Archo coughed and then came suddenly the hot water with lemon.  Cherry Ann said that her head was aching and then came instantly the aspirin.  Finally, together with the whole staff, a surprise birthday song and a birthday cupcake were given to Cherry Ann!  That's just how sweet our waiter Renneth was!  Catering to our needs even if it's already beyond the scope of his job.  Thank you so much for taking so much care of us, Renneth! :)

I definitely wanna go back to Fiesta Bay Asian Seafoood Restaurant to have a taste of their lobsters someday!  So if by chance you're gonna visit Cebu, drop by at Fiesta Bay along Punta Engaῆo Road, Mactan Island.  It is just right across Mövenpick Hotel Mactan Island Cebu if in case you'll get lost.

Handicrafts that are perfect for pasalubong are also available at the resto where Ruth got a pretty little shell for Naiah.  :)
